Essential Duties, Responsibilities, and Goals:
- Involvement with Dessert Menu, which changes seasonally.
- Aware & knowledgeable of trends in the industry.
- Passion for how items are created including nutritional ingredient consideration.
- In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition.
- Working knowledge of baking with ingredient limitations (pastries that are gluten free, nut free, sugarless etc.).
- Must be organized, and ability to work alone
- Evaluates and solves problems encountered such as substituting items on menus, and reducing excess waste and spoilage.
- Able to create recipes & source ingredients necessary to create menu items
- Make sure station has essential items in place for service
- Position requires hands on scratch baking.
- Some food purchasing may be required and responsibility for food inventories.
- A sense of passion and genuine concern for the finished product & the enjoyment it provides to our members and guests is extremely important.
- Daily communication with culinary managers, staff along with the FOH team
- Cleans equipment and workstation thoroughly during and at the end of each shift in order to maintain proper sanitation and orderliness.
- Create new and exciting desserts to renew our menus and engage the interest of members and guests.
- Must have or be able to obtain a valid Food Handlers Safety Training Card.
- Maintain a lean and orderly baking station and adhere to health and safety standards.
- Ability to work shifts as business dictates including; holidays & weekends.
- The Assistant Pastry Chef reports directly to the Pastry Chef and Executive Chef.
